Yixing is a small city in eastern China most famous for its zisha pottery, also known as "purple clay".  The use of zisha to make beautiful teapots dates back beyond the Song Dynasty, when tea masters prepared tribute teas for the imperial court in these hand-crafted works of art.

 Zisha pottery is typically unglazed, allowed its porous surface to absorb the flavors of tea leaves and accumulate a unique complexity over time.  Therefore, Yixing Zisha teapots improve with age, and many tea connoisseurs swear by them for infusing fine oolong and puerh teas.

Zisha teapots are not to be washed; only rinsed with hot water.  Many obsessive tea lovers insist that one must dedicate a different Yixing teapot for each type of tea, so as not to blend flavors from one leaf to the next.  Some teapot collectors simply love the artistic designs and shapes.  Thus, rare teapots from the most talented artists and craftsmen can get extremely expensive.

Tea Infusion Quantities

So how many cups is 50g of tea? Or 1lb of tea leaves?

The appropriate amount to use depends on the size of the teapot, teacup, or gaiwan, and how much water is being applied.  Typically, an average serving of tea in a small-medium vessel is about 4-6 grams.  Experienced tea drinkers will often use 6-8 grams per serving - with shorter and more frequent infusions.

Therefore, a 50 gram pouch of tea should be good for 8-12 servings of tea.  Depending on the type of tea, however, the leaves can withstand several "steepings", so that 50 gram pouch should allow for 24-50 cups of tea!  And, since a pound (lb) is about 450 grams, a properly steeped pound of tea should produce several hundred cups of tea!
